Curry Chick'n Wrap

This Curry Chick’n (or Tuno) recipe is one of my favorites because it is a no-cook dish and is ready in less than 15 minutes! Great on a sandwich, wrap or on fresh greens and it keeps for days once refrigerated.

Preparation and Assembly Time: 15 minutes
Cooking Time: NONE!
Yield: 6 servings (sandwiches, wraps or salads)

INGREDIENTS

5 pieces Gardein™ Chick’n “Breasts”, chopped (plain flavor, about 2 ½ lbs) or Vegan Tuna (VegeUsa® Vegan Tuna Rolls)
1 large apple, unpeeled and chopped (sweet variety such as Fuji or Honeycrisp)
1 cup raisins
1 cup walnuts, chopped
¾ cup Vegenaise® Vegan Mayo
2 teaspoons curry powder (sweet)
1 teaspoon turmeric
A dash of sea salt, to taste (optional)
Fresh Greens (optional)
6 tortillas or 12 slices of bread (optional)

DIRECTIONS

Mix all ingredients in a bowl. Serve over fresh greens or make sandwiches or wraps.

 Makes 6 servings
