I am always looking for creative ways to prepare leftover homemade seitan since one package feeds our family for four days! Although it's super economical and convenient, it can get a bit monotonous so this weekend I used seitan in a few recipes where I would normally use another vegan meat. For this delicious, easy pizza I used seitan as my meat instead of using veggie ham or sausage.
TIP: If you make a full batch of homemade seitan, you can always freeze some and use it later, as I did for this recipe. I used seitan I made last week and had stored frozen since then. I just let it thaw overnight and it was ready to go the next morning.

Cooking Time: 20 minutes
Yield: one 12" Pizza
INGREDIENTS
1 unbaked ready made pizza dough
4 oz sun-dried tomatoes packed in oil, undrained
3 oz tomato paste
1 package Simply Organic® Tomato Basil Spaghetti Sauce Mix (or 2 tablespoons Italian Seasoning of your choice)
8oz package Daiya® Mozzarella Style Cheese
1 cup chopped seitan
¼ onion - chopped
1 cup broccoli, chopped into bite-sized chunks
1 teaspoons garlic powder
Oil for sautéing
DIRECTIONS
Step 1: Preheat oven to 425 degrees. Spread and flatten the the pizza dough out on a 12" pizza round or baking dish. Set aside.
Step 2: Make the pizza sauce as follows: combine the sun-dried tomatoes (use the oil they are packed in as well), the tomato paste and the seasoning package in a blender or food processor until well mixed.
Step 3: Spread a thin layer of pizza sauce on the crust. Top it with half of the Daiya cheese.
Step 4: Sauté the seitan, onion and broccoli and garlic powder in a bit of oil until the onions are softened and the seitan is a bit crispy. Add this mixture to the pizza. Top with the remaining Daiya cheese.
Step 5: Bake at 425 degrees for 15 minutes or until the crust is bubbly and slightly crisp. Let cool and cut into slices.
