Chick'n Fried Rice is a favorite side dish of ours, and goes great with Seitan Steak, BBQ Smoked Apple Sage Sausage, and BBQ Chick'n! This is one of the dishes that Londale Jr. made when he was in college - right in his dorm room so you know it's simple.
Preparation and Assembly Time: 8 minutes
Cooking Time: 10 minutes
Yield: 4 - 6 servings
INGREDIENTS
½ chopped onion
4 pieces Gardein™ chick’n “breast”, chopped or 2 ½ cups chopped vegan chicken substitute
2 ½ teaspoons Spike® Seasoning
½ teaspoon Black Pepper
3 cups cooked rice
Oil for sautéing
DIRECTIONS
In a large skillet, heat oil and sauté Gardein™, onions, and about ½ teaspoon Spike® until the onion is translucent and the Gardien™ are slightly browned.
Add rice and slightly more oil to the Gardein™ and onion. Keep cooking on high heat to blend the flavors. Make sure to stir constantly so that the mixture does not burn. Reduce the heat to medium.
Add the remaining 2 teaspoons of Spike®, ½ teaspoon pepper and continue to stir. Taste and add more Spike® or pepper to taste.
Makes 4 - 6 servings.
