Another one of our favorite products from Vegetarian Plus is their Vegan Citrus Spareribs. These are great if you're short on time but still want to have a healthful, flavorful meal. It is one of our "straight outta the box" products because all you have to do is serve over rice - no messing with the sauces or anything. The spices, flavors and texture is perfect - ready to go in minutes. Add some sauteed leftover vegetables for variety!
Preparation and Assembly Time: 8 minutes
Cooking Time: 10 - 15 minutes
Yield: 4 servings
INGREDIENTS
2 packages of VegeUSA® Vegetarian Plus Vegan Citrus Spareribs (about 10.5 oz each package) - in freezer section of store
½ sweet onion, chopped
½ sweet orange pepper, cored and chopped (or you can use 1 large chopped carrot also)
½ cup mushrooms, chopped
Oil for sautéing
2 cups cooked rice (optional)
DIRECTIONS
- Heat the oil in a skillet and sauté the onion until it becomes somewhat soft (medium high heat).
- Add the sweet orange pepper (or carrot) and mushrooms and stir a few times. Add the vegan citrus spareribs to the vegetables and stir.
- Place a lid over the skillet and lower the heat to a very low simmer for 5 to 10 minutes. Serve over a bed of rice.
Makes 4 servings.
